AGAVE CULTIVATION 

  • Mezcal begins with the careful cultivation of agave, which can take 7 to 25 years to mature.

  • Varieties like Espadín, Tobalá, and Tepeztate each bring unique flavors.

  • Grown in Oaxaca and other mezcal-producing regions, the agave thrives in diverse soils and climates.

  • Once matured, skilled jimadores harvest the agave by cutting off the spiky leaves, leaving only the heart (piña).

  • The piñas can weigh up to 200 pounds and are transported to the palenque (mezcal distillery).

ROASTING THE PIÑAS

  • The piñas are slow-roasted in underground, stone-lined pits using wood and hot stones.

  • This process lasts several days, giving mezcal its signature smoky flavor.

CRUSHING & MASHING

  • The roasted piñas are crushed by a tahona (stone wheel) or by hand with wooden mallets to extract the sweet agave juice.

  • The crushed agave is transferred to wooden vats for fermentation.

FERMENTATION

  • Natural fermentation occurs in open-air wooden or stone vats using wild yeasts.

  • This process can take several days to weeks, influenced by climate and altitude.

DISTILLATION

  • The fermented liquid is distilled in copper or clay pot stills.

  • Typically, mezcal undergoes two distillations to refine its flavors and reach the desired alcohol content.

BOTTLING & ENJOYING

  • Once distilled, the mezcal is filtered and bottled by hand.

  • Every bottle tells a story of tradition, craftsmanship, and the spirit of Oaxaca.
